To organic or not to organic?
I'm often asked whether using organic ingredients is worth it. In a perfect world, everything would be heirloom, untouched by chemicals, sustainably harvested and treated with the care and respect it deserves. The reality is that we have to choose what works best for our budget, mindset and diet. I'm willing to pay more for organic beef via a small local co-op and use less produce that come from distances so far that render their carbon footprints too large to justify. For me, that makes sense.
